Taco bake
2 lb ground beef or ground turkey
2 packets taco seasoning
1 can kernel corn
2 cans Rotel tomatoes, undrained
1 lb Mexican Velveeta cheese (I used Mexican Velveeta)
2 cans refrigerated crescent rolls
sour cream
salsa
Preheat oven to 375.
In a large skillet, brown the ground beef and drain the fat. Return meat to skillet, add taco seasoning and Rotel tomatoes. Mix well and simmer for 5 minutes.
Lightly spray a 9x13 pan with cooking spray. Press one can of crescent rolls in the bottom of the pan. Top with ground beef. Slice Velveeta and lay on top of meat. Top with remaining can of crescent rolls.
Bake 20-25 minutes, until crescent rolls are brown. Top with favorite toppings - sour cream, salsa, jalapeños, guacamole, lettuce.
My quick guacamole recipe:
4 Ripe avacodoes
1/4 cup of hot salsa
1Tbs. chicken boulion
Cut and spoon out the avacodoes into a bowl(minus the seeds there a little to crunchy)
mash the avacodoes and mix in the rest of ingredients and mix till desired consistancy.

Made some fresh Ketchup it was good a bit to clovy in flavor so gonna leave it out the next time. Here is the Recipe:Homemade Ketchup
12 oz tomato paste
1-1 and 1/2 cups water
5 Tbsp vinegar
3/4 tsp onion powder
1/4 tsp garlic powder
3/4 tsp mustard powder
1/2 tsp cinnamon
2 -3 tsp salt
1/4 tsp cloves
1/4 tsp allspice
1/4 tsp cayenne (or more!)
1/3-1/2 cup brown sugar
Whisk all together, and store in fridge.
